摘要
中等职业学校烹饪专业与社会发展紧密相连,与人们的生活变化直接相关。目前,各餐饮企业都在加强企业文化的建设,不断形成自身的特色和特点,而烹饪专业原有的课程和形式已经不能满足要求,提高烹饪专业实践教学,已经成为一种市场需求。提高烹饪专业实践教学实效性的重要性与紧迫性关系到烹饪专业的兴衰与发展,关系到学生的可持续发展,关系到企业技术人力资源的质量,关系到专业教师的前途与发展。
The cuisine programs in secondary vocational schools are closely connected to social development and the changes in people's lives. At present every catering business is trying to establish and develop its own culture. However, the courses and their teaching forms are not following the changes. The cuisine programs should meet the demand of the markets to incorporate more practical training. Improving the effectiveness of practical training is crucial for the program progress, sustainable development of the students, the quality of human resources in businesses, and the career prospects of teachers.
