摘要
通过对蛋白含量不同的四个小麦品种在籽粒灌浆期 (花后 12天 )、乳熟期 (花后 18天 )和成熟期的氨基酸含量的测定发现 :籽粒中氨基酸总量在籽粒形成过程中表现为递增趋势 ,大多数氨基酸含量随籽粒发育进展呈递增趋势 ,赖氨酸 (lys)含量则大体随籽粒发育进展呈减少趋势 ;通过对供试品种必需氨基酸的平衡性分析表明 ,亮氨酸和酪氨酸 +苯丙氨酸的含量基本接近要求 ,其它六种必需氨基酸均没有达到标准要求 ,赖氨酸为第一限制氨基酸 ,苏氨酸为第二限制氨基酸 ,而且高蛋白品种氨基酸评分值普遍小于中低蛋白品种氨基酸评分值。
Through the test of amino acid centent for four wheat cultivars those with different protein centent at 12d after bloom, 18d after bloom and mature periocl it shows that the total amino acid content in seed is a tendency to increase during grain forming preiod, the great majority of amino acid content is increased while seeds develop. but the content of lysine decreased. The balance analysis of the nesessary amino acid shows that the contents of leucine and tyrothricin+phenylalanine accord with the demands, the contents of the other six necessary amino acids do not achieve the standard. The values of the amino acid of high-protein cultivars are generally lower than that of low-protein cultivars.
