摘要 以玉米淀粉为原料,经过辛烯基琥珀酸酯化和Al2(SO4)3交联处理制备高流动性淀粉。通过活化指数和休止角等性质的测定,对处理前后的玉米淀粉进行评价,并研究了高流动性淀粉的颗粒形貌。结果表明,在辛烯基琥珀酸酐(OSA)添加量为2%,Al 3+离子添加量为1%,交联pH值为4的条件下,所得改性淀粉的流动性和疏水性最好。与原淀粉相比,高流动性淀粉颗粒表面发生一定程度的变化。 Using corn starch as raw material, dry-flowing starch was prepared by octenyl succinic anhydride esterification and A13+ cross-linked. The flowability and hydrophobicity of the native and modified corn starches were characterized by activation index and repose angle, and the SEM images were also studied. The results showed that the reactive condition by producing good flowability and hydrophobicity were as following .. the OSA amount of 2 %, AP+ amount of 1% and pH4. Compared with native starch, the surface structure of modified starch was changed.
