摘要
近年来食品安全问题受到了人们的广泛关注,需要对食品分析及安全检测关键技术展开研究。该文介绍了食品安全的概念、特点、来源以及分析的预处理方法,综述了转基因食品检测法、色谱-质谱法、酶联免疫分析法、光谱分析法、生物传感器法和生物芯片等在食品分析及安全检测中的应用,分析了国外相关领域的研究热点,并给出未来的发展方向和解决方法,强调了食品安全分析及检测在食品安全问题中的重要性。
In recent years, it's more and more concerned about the food security problem. Research on key technology on food analysis and security detection is become necessary. This paper introduces the concept, characteristics and resources of food security, and pre-teatment method for analysis is also demonstrated. Detection methods, such as of transgenosis food detection, chromatography-mass spectrometry, ELISA, spectroscopy analysis, biosensor and bio-chip method, and hot research areas are summarized in the paper. The prospect of future development and solution methods is pro- posed and the importance on the food analysis and security detection is also identified.
