摘要
较系统地分析评价了漯珍黑小麦的主要营养成分 ,结果表明 ,黑小麦在蛋白质、脂类和灰分含量上比普通小麦分别高 2 3.2 6 % ,1 1 .2 6 %和 8.2 6 % ,且氨基酸种类比较齐全 ,必需氨基酸与非必需氨基酸质量平均高于普通小麦 2 3%左右 ,矿物质元素含量比较丰富 ,尤其在硒、锰与碘含量上具有突出优势。
Main nutritional compositions of black wheat Luozhen No.1 were analyzed. The contents of protein, fat and mineral were 23.26%, 11.26% and 8.26% higher than those of general variety respectively. The amino acids composition of protein was relatively balanced. Mineral elements were rich, especially Se, Mn and I.
