摘要
以新鲜莲藕为原料加工清凉藕汁饮料。对生产工艺进行研究,确定去皮、切片、护色、打浆、沉降、调pH、调糖酸比等工序,并对这些工序的工艺进行优化,研制出营养丰富、外观诱人、藕香浓郁、口感良好的天然清凉藕汁饮料。
A refreshing beverage was made from fresh lotus root as the raw material. The processing technology was studied to confirm the processes including peeling, slicing, color preservation, beating, settlement, pH adjustment and sugar-acid ratio regulation, which were further optimized to give a natural refreshing lotus root juice beverage characterized by abundant nutrients, attractive appearance, rich lotus root aroma and nice taste.
