Dietary and nutritional survey of boarding students in Chengdu rural area

摘要 目的了解成都市农村寄宿制学校中小学生的膳食与营养状况,为开展学生营养干预提供依据。方法抽取成都市农村寄宿制学校2所,对学校食堂采用连续3 d称重记账法进行膳食调查,同时测量学生的身高、体重和血红蛋白,评价营养状况。结果成都市农村寄宿制学校食物品种单一,膳食结构不合理,鱼虾类、蛋及蛋制品、大豆、奶类及水果摄入严重不足;能量和蛋白质摄入充足,但微量营养素除维生素C外均不足。学生营养不良和较低体重检出率为49.4%,贫血患病率为33.9%,均高于全国农村学生平均水平。结论成都市农村寄宿制学校学生膳食和营养状况不容乐观。政府、学校、家庭应相互协作,共同努力,促进学生合理膳食,改善营养状况。 Objective To study the dietary pattern and nutritional status of boarding students in Chengdu rural area, and to provide evidence for government to develop intervention programs. Methods Diet surveys were made through 3-d weighting and recording methods in two rural boarding school canteens, and boarding students' height, weight and hemoglobin were tested for nutritional evaluation. Results The dietary structure of boarding students in Chengdu rural area was simple and unreasonable. The daily intakes were deficient on fish, egg, soybean, milk, fruit and so on. The micronutrients, except vitamin C, were insufficient. The detection rate of malnutrition and low weight was 49.4%. The prevalence rate of anemia was33.9%, which was higher than that of average level of rural students in nationwide. Conclusion The dietary and nutritional status of boarding students in Chengdu rural area is bad. The government, school and family should cooperate with each other to promote the rational diet and nutritional status.
