This paper deals with the extraction techniques of edible pigment maize yellow from naize yellow powder,that is by\|product in a maize starch plant.The yield of first extracting may come up to 84% by using anhydrous alcohol as extracting agent.The absorbance at 445nm of the anhydrous alcohol solution containing 1% of the liquid pigment product is about 4.0.\;
