摘要
[目的]探讨枣皮红色素的提取最佳提取工艺并研究其稳定性,为枣皮色素的开发利用提供基础。[方法]以市购红枣为原料,NaOH为提取剂,采用正交试验设计优化枣皮色素提取工艺;提取的色素改变pH、温度及添加氧化剂、还原剂等,观察其稳定性。[结果]正交试验得出,各因素对枣皮红色素提取的影响程度为提取剂浓度>提取温度>提取时间>料液比;最佳提取工艺为NaOH浓度0.2mol/L、温度80℃、提取时间3 h、料液比为1∶15 g/ml。枣皮红色素的稳定性试验结果表明,该色素在酸性条件下不稳定,对碱、温度、氧化剂、还原剂较稳定。[结论]用碱法提取枣皮红色素方法简单,且提取的到的红色素稳定性好,值得推广应用。
[Objective] To study the best extraction process and stability of red pigment from jujube peel,so as to provide basis for the development and utilization of the pigment.[Method] The jujube was extracted with NaOH,and the extraction process was optimized by orthogonal experiment,the stability of pigment was observed under different pH,temperature and when added with antioxidant and reducing agent.[Result] As concluded from the orthogonal experiment,the influential order of each factor on the extraction of pigment was extractant concentration 〉 extraction temperature 〉 solid-liquid ratio;the best extraction conditions were 0.2 mol/L NaOH concentration,80 ℃ of temperature,3 h of extraction time and 1∶ 15(g/ml) solid-liquid ratio.The stability test showed that the pigment was stable except under acid conditions.[Conclusion] It is simple to extract the pigment with NaOH,the extracted pigment is stable and can be popularized.
