摘要 对美拉德反应产物的生物学效应例如抗氧化作用、抗菌及细胞保护作用、抗突变作用、抗过敏作用和无益方面的致敏作用、突变性毒素作用、致染色体断裂作用、致癌作用进行综述。 This paper reports biological effect that includes antioxidation, antibacterial and cytoprotection, antimuta- genic effect, antiallergic effect, sensitization, mutagenicity - genotoxic effects, induced chromosome faulting, carci- nogenesis of maillard reaction products.
