摘要
维生素C是人体所必需的营养物质之一,其含量是评定果实营养价值的重要参数之一。文章采用直接碘量法测定了黄瓜中维生素C的含量。结果表明黄瓜中Vit C的含量为0.08174 mg/g,加标回收率为98.52%~98.80%。说明黄瓜中Vit C含量较高,具有较大的营养价值。
Vitamin C is one of the indispensable nutrients substance in body and the content of it is one of the most important quality parameters in fruit.In the paper the content of Vitamin C in cucumber was determinated by direct iodometric method.The results indicated that the content of Vitamin C in cucumber was 0.08669 mg/g and the recoveries were 98.32 %~98.83 %,which showed that the cucumber has high concentration Vitamin C and has biggish nutritional value.
