大豆是我国的重要粮油作物之一。我国大豆的加工利用可分为传统大豆制品和新兴大豆制品两大类。我国现阶段大豆加工的重点是开发专用功能性大豆蛋白。
Soybean is one of the most important food and oil crops. Processing and utilizing of soybean includes traditional soybean products and new soybean products in our country. At present, the focal points of soybean processing are exploiting soybean proteins with special functions, exploiting and utilizing bioactive compositions of soybean and industrizing traditional soybean products.
