不同原料品种的苹果脆片品质评价及其相关性分析 被引量:11

摘要 测定20个早熟品种苹果脆片的16项品质评价指标,研究指标间的相关关系,为建立苹果脆片品质评价体系提供科学依据。结果表明,不同原料品种加工的脆片指标测定值有较大差异,变异系数均达到10%以上。指标间存在着不同程度的相关关系,但偏相关分析与简单相关分析的结果不完全相同,在有第三方影响因素情况下,膨化度与含水率仍具备显著的相关关系,而脆度与膨化度、脆度与含水率无明显相关关系。 Sixteen indexes related to the quality evaluation of 20 kinds of early varieties apple chips were surveyed in this paper,as well as the correlation analysis of each index,scientific basis for establishment of apple chips quality assessment system was provided in this study.The results indicated that there were quite differences among varieties of indicators,the coefficient of variation was larger than 10%.As well there were different correlations between each index;the results were dislike between partial correlation analysis and simple correlation analysis.In the case of a third party influence,the correlations between the dilatability and water ratio was significantly positive,but there was no remarkable correlation lay between the brittleness and dilatability,brittleness and water ratio.
