摘要
小肽的高营养易吸收性对于促进幼雏消化系统早期发育及维护动物肠道健康具有重要意义。采用生物酶体外酶解玉米蛋白,通过单因素分析法研究了碱性蛋白酶水解玉米蛋白的条件,结果表明:当pH值为9、酶量为2 mL、温度为55℃、变性剂A为0.5 g时,玉米蛋白在1 h内的水解度可达30.85%。
It is significant that oligopeptides promote the digestive system early development and maintain animal intestinal health in that it's full nutrition and easy absorption. In this paper, hydrolysis conditions of CGM was obtained through single-factor-analysis, pH 9.0, amount of enzyme 2 mL, denaturant A 0.5 g and hydrolysis for 1 h under 55℃. The results showed the degree of hydrolysis was up to 30.85%.
