摘要
食源性致病菌的绿色控制是目前食品安全面临的难题和瓶颈。本文就蛹虫草抑菌活性的研究与开发现状进行了综述,并就发展趋势进行了分析,以便为蛹虫草资源抑菌活性的基础研究和在食源性致病菌绿色控制方面的开发利用提供参考。
Currently,the green control over foodborne pathogen is a bottle-neck problem for food security system. For better understanding the antibacterial activity and facilitating its utilization of Cordyceps militaris resource in food protective industry,the status of research and development of Cordyceps militaris were summarized and its future prospect was subsequently analyzed in this paper.
