摘要
以厦门市餐饮业普查数据为基础,结合实地考察,运用ArcGIS空间分析,以街道为研究单位分析了厦门市餐饮业的空间格局。结果发现,厦门市的餐饮业分布岛内岛外差异显著,以厦门岛为核心呈现圈层式发展,岛内从城市中心向外递减,各街道内餐饮业主要以组团式集聚和带状分布相结合的方式出现。综合考虑区域经济水平、人口密度、交通便捷程度、城市空间格局等与餐饮业分布有关的影响因素,运用SPSS进行相关性分析,结果表明:餐饮业的空间分布与城镇住宅面积、商业服务用地关联度最高;城市的公共设施用地面积和城中村住宅面积与餐饮业的发展呈负相关关系;中档次的餐馆最能代表餐饮业的发展特征,人口密度与中档次的餐饮分布呈显著正相关;第三产业的比重对餐饮业的档次分布有决定性作用;小型餐饮单位的分布与路网密度的正相关性最大。
Based on Xiamen catering industry census data and field investigation, this study analyzes the spatial structure of catering industry in Xiamen with the aid of spatial analysis tools in Arc GIS software, taking street as the study unit. It is found that there are significant differences for spatial distribution of catering industry between inside and outside of Xiamen Island. Inside the island, spatial distribution of the catering industry presents a concentric-circles-style development, the number of restaurants gradually decreases from the center of the island to outward areas. In each street of the island, the catering industry gathers as zonal and cluster modalities. The results of correlation analysis between influence factors show that: there is positive correlation between the spatial distribution of catering industry and urban residential area or commercial land; the city's public facilities areas, residential village's areas limit the development of catering industry. The mid-class restaurants can represent the development characteristics of catering industry, and their spatial distribution has positive correlation with the population density. The proportion of the tertiary industry has a decisive role on the grade distribution of catering industry. Road network density plays a decisive role on the distribution of small catering units.
