摘要
畜产品加工学是食品科学与工程专业的必修课程之一。为提高教学质量,培养学生实践和创新能力,从教学大纲与内容、教材、教学手段、教学方法、实践操作能力及考核方式等方面,对畜产品加工工艺学课程教学改革进行了初步探讨。
Science and technology of animal products is one of required courses for food science and engineering. In order to improve the quality of teaching and university students' practical and innovative ability, this paper explores the teaching reform of science and technology of animal products from the curriculum and contents, teaching books, teaching methods, practical operation ability and assessment methods.
