摘要
以大豆分离蛋白为原料,重点探讨了几种外部因素对大豆分离蛋白溶解度的影响。结果表明,大豆分离蛋白的溶解性与pH值、加热温度、离子浓度、多糖和表面活性剂等因素密切相关。因此,在大豆分离蛋白的提取、加工和应用中应该考虑这些因素。
Using soy protein isolates as a raw material, the effects of several external factors on the solubility of soy protein isolates are studied. The results show that soy protein isolates solubility and pH value, temperature,metal ion concentration, polysaccharide and surfactant are closely related. Therefore, as the extraction, processing and application of soy protein isolates, these factors should be taken into consideration.
