摘要
蛋白类产品的生产和加工体系较为复杂,而蛋白质含量的分析精准测定是现代分析科学面临的困难课题之一。目前蛋白质定量测定的方法很多,其中有机染料光度法尤为受到关注。本文分析了一些有机染料与蛋白质相互作用变色反应机理,并探讨了复杂体系中pH、离子强度、表面活性剂和疏水物质等干扰物对染料-蛋白质复合物吸收光谱的影响。
Protein products production and processing system were relatively complex,and accurate determination of protein content analysis was the difficulty faced by modern scientific analysis of one of the topics.Currently,many methods were used in the determination of protein,among of which organic dyes spectrophotometric method had attracted more attention.This paper introduced the color reaction mechanism of the interaction between some organic dyes and protein,and discussed the influence of distractors such as the complex system of pH,ionic strength,surfactant and hydrophobic substance on dye-protein complex absorption spectra.
