摘要
在测定了荞子的化学组成及其蛋白质等电点的基础上 ,应用碱溶法提取荞子蛋白和淀粉 .其淀粉含量为 41 30 %,蛋白质含量为 2 3 32 %.
Wild legume Qiaozi,the leftover odds and ends of flour mill,has not been made full use now.Then its starch content is 41.30% and protein content is 23.32%.After analyzing and determining its chemical composition and protein isoelectric point,protein and starch can be extracted by alkalimethod,which provides feasible reasons for the effective use of Qiaozi.
