摘要 文章综述了乳酸菌发酵剂在冷冻干燥和贮藏过程中影响乳酸菌存活率的相关因素,包括菌体内在因素、生长因素、非致死性处理、冷冻干燥技术、冻干保护剂、复水和贮藏等。 This review summarized several relevant factors affecting lactic acid bacteria (LAB) livability during freeze-drying and storage, including intrinsic factors, growth factors, sub-lethal treatments,freeze-drying, protective agents, rehydration and storage.
