摘要
对利用圆盘制曲机制备黄酒纯种麦曲进行了研究。生产实践表明,麦片投料5000k,接种量21.25kg,洒水量1400蚝,静止培养12h,温度和湿度分别控制在30℃~37℃和100%,通风培养36h,温度和湿度分别控制在37℃-40℃和100%~95%,培养期间共翻曲3次,制得的成品纯种麦曲的糖化力稳定保持在1030mg/(g.h)以上,液化力、含水量和酸度也均符合优良标准,满足了机械化黄酒酿造的实际需要。
The application of disk starter propagation machine in the production of rice-wine pure wheat Qu was studied. The production practice suggested that the saccharification capacity of pure wheat Qu could keep above 1030mg/(g-h) when the following technology was used: 5000kg wheat, 21.25kg inoculum and 1400kg cold boiled water were mixed for 12h static incubation at 30℃-37℃ with humidity of 100%, and then, for 36h aeration culture at 37℃-40℃ with humidity of 100%-95%; the mixture was stirred for 3 times during the whole cultivation. The liquefaction capacity, moisture content and acidity of pure wheat Qu were also excellent and could meet the needs of mechanized rice wine production.
