Investigation of food salmonella contamination in Shaanxi Province

摘要 目的了解陕西省食品中食源性致病菌沙门氏菌污染情况。方法 2002-2007年检测陕西省8个监测点的14类2 960份食品,采用现场调查与实验室分析相结合的方法。结果 2 960份食品中检出沙门氏菌污染230份,沙门氏菌检出率7.77%。其中生猪肉、生牛肉、生禽肉、生羊肉的沙门氏菌检出率分别为19.10%、21.93%、11.63%、16.59%;熟肉和水产类为检出率5.76%、3.83%;奶类、速冻米面等食品中未检出。在时间上,以2005年检出率最高,2007年最低。在空间上,陕北高于关中高于陕南(χ2=12.16,P<0.01);病原学鉴定分属11个血清群或亚群、28个血清型,发现了陕西省未曾报道的Q群和其他血清型沙门氏菌。结论要在努力把关生肉食品微生物污染的基础上,高度关注和严格控制熟肉食品的微生物污染,防止肉食品变质;根据关中、陕北人口密度高、流动性大的特征开展食品卫生工作,落实监管措施,防范新种群菌株的扩散,保障食品安全。 Objective To understand food Salmonella contamination in Shaanxi Province.Methods Combination of on-site investigation and laboratory analysis were performed in this study.Results Salmonella were detected in 230 of 2 960 samples of 14 varities from eight districts and the detection rate was about 7.77%.The detection rate of Salmonella were 19.10%,21.93%,11.63%,16.59%,5.76%, 3.83% for pork,beef,poultry,mutton,cooked meat,aquatic products respectively;it was not detected in dairy products and quick-frozen wheaten food.The rate was the highest in 2005 and the lowest in 2007;the rate of north Shaanxi,guanzhong plain and southern of Shaanxi decreased successively(χ2 = 12.16,P0.01).11 serogroups or sub-groups,28 serotypes were found by pathogen identification New type including Q groups which had not been reported in Shaanxi were found by pathogen identification.Conclusions We must strictly control the microbial contamination of meat to prevent the deterioration,especially for cooked meat,grasp the feature of high population density and flow in northern and guanzhong plain of Shaanxi,and apply regulatory measures to prevent the spread of new type salmonella for food safety.
