摘要
本文介绍了小麦麸皮的组成成分、功能成分及近些年来以小麦麸皮为原料的研究、开发及加工利用。麸皮是小麦加工的主要副产物,麸皮中含有丰富的碳水化合物、蛋白质、维生素、矿物质等,广泛用于饲料工业和食品工业中。通过对麸皮在饲料和食品中应用的探讨,旨在引起消费者和食品厂商的关注,发展国内麦麸类食品。
This article described the composition of wheat bran,functional ingredients,in recent years wheat bran has been used as raw material for researching,development,processing and utilization.Bran is the main byproduct of wheat processing.It is rich in carbohydrates,protein,vitamins and minerals,widely used in feed and food industry.The further and comprehensive utilization of wheat bran was discussed in feed and food industry,for the purpose of arousing the general concern of consumer and factory owner, developing domestic wheat bran food.
