系统地阐述了近年来国内外在茶树活体及红茶加工中多酚氧化酶和过氧化物酶的研究进展.
According to recent ten years research reports of ployphenol oxidase (PPO) and peroxidase(POD) in China and abroad,this paper has systematically expounded rules of PPO and POD in lively tea tree and their physiology and heredity in black tea manufacture.
