摘要
以‘玉露’和‘仓方早生’桃果实为试材,测定了成熟衰老过程中脂氧合酶(LOX)活性的变化。结果表明,采后玉露桃果实在20℃下贮藏,后熟软化进程很快,采后1~5d,硬度由(14.93±1.00)kg/cm2降至(5.11±0.85)kg/cm2,随后变化平缓,表现为采后初期硬度快速下降期和后期缓慢下降期两个阶段,但仓方早生桃果实的软化类型不同于玉露;两品种果实均具有典型的乙烯跃变过程,LOX活性峰先于乙烯释放峰出现2~3d。5℃低温贮藏可显著抑制LOX活性及乙烯的生成,有效地减缓软化;经低温贮藏16d后的玉露桃果实,置于20℃仍能正常后熟软化,且不影响其品质。
For understanding the role of lipoxgyenase(LOX)in fruit ripening,the Chinese peach( Prunus persica L.)cultivars,‘Yulu’and‘Cangfangzaosheng’,were used to investigate the changes of LOX activity and ethylene production related to fruit softening after harvest.There were two phases of fruit softening,i.e.fast softening in earlier phase that fruit firmness decreased from(14.93±1.00)kg/cm 2 on 1st day to(5.11±0.85)kg/cm 2 on 5th day during‘Yulu’fruit ripening at 20℃,the different ripening pattern of fruit was obtained in‘Cangfangzaosheng’fruit.Ethylene production rose slightly,whereas a marked increase in LOX activity was observed in first 4-5 days,the ethylene climax was seen 2-3 days later than the appearance of maximum LOX activity in the fruits of both cultivars stored at 20℃.When‘Yulu’fruit was stored at 5℃,LOX activity and ethylene production was markedly inhibited while the fruit softening was delayed.The possible role of LOX in fruit ripening was discussed as well.
