摘要
作者对6 株人工栽培的金针菇进行了蛋白质及氨基酸含量的测定与分析, 发现金针菇伞的营养价值仅占整个菌株的1/3 。在整体营养价值上, 金针菇的氨基酸含量全面, 且必需氨基酸含量较高, 已测的7 种占氨基酸总量的48-23% , 尤其是苯丙氨酸含量较高, 是一种较理想的营养保健食品。在供试的6 个菌株中, 89—6 菌株的蛋白质及氨基酸含量均为最高, 人工栽培时, 是一个值得推广的较优良品种。
The content of protein and amino acid in Flammulina velutipes was tested using six artificial cultivated Flammulina velutipes.The investigation shows that the nutrition value lies in the cup of Flammulina velutipes accounts for 1/3.On the whole nutrition value,the amino acid content in the Flammulina velutipes is comprehensive,even more necessary amino acid content is rather high.The tested content of seven varieties make up 48 23% of the whole amino acid content, espcially Phe content is high,it is an ideal nutritious health protection.Among six supplied vaccines,89—6 is the highest in protein and amino acid content, it is a fine popularizable variety.
