摘要
采集６０和９０日龄腾冲雪鸡公母各８只的胸肌和腿肌的混合肉样，对水分、粗蛋白、粗脂肪、磷及１６种氨基酸含量进行了测定，分析结果表明：（１）６０和９０日龄时所有营养成分测定值无性别和日龄差异（Ｐ＞０．０５），表明此期间腾冲雪鸡营养成分变化不大．（２）腾冲雪鸡粗蛋白和粗脂肪含量较高，平均分别为２４．２２±０．８９和２．５３±０．７４，高于其它云南地方鸡种，与野生雪鸡近似．（３）腾冲雪鸡氨基酸中必需氨基酸与非必需氨基酸的比值较高，为１．１２±０．２４，具有较高的蛋白质营养价值．
The muscle samples from Tengchong Snowcock with different age and sex were collected.From those samples the water content,crude protein content,crude fat content,phosphorus content and sixteen kinds of amino acids were measured.The analysis results show:(Ⅰ)There are no significant differences (P>0.05) in all of nutrients among different age and sex,which infers that there is no significant change in nutrient between 60 and 90 days and sex; (Ⅱ)The content of crude protein and crude fat are 24.22±0.89 and 2.53±0.74,respectively,similar to those of wild Snowcock,much higher than those of other native chickens in Yunnan;(Ⅲ)The ratio of indispensable amino acids to dispensable amino acids is higher than that of wild Snowcock and other native chicken in Yunnan.They are 1.12,1.03 and less than 1.04,respectively,showing the higher value of nutrition of protein.
