摘要
通过雪鸡肉的氨基酸和微量元素等成分测定表明:雪鸡肉中的氨基酸含量丰富,总合百分含量最高达22.21%。养殖的雪鸡肉中氨基酸总合百分含量比野生雪鸡还高2.34%。四种微量元素的含量,二者差异不显著。
Contents of amino acids and trace elements in the Snow Cock (Tetraogallus spp.) meat were analysed. Results indicated a rich amino acid content with the total of 17 kinds up to 22.21%, and2.34% higher of in captivity than in the wild. In terms the 4 trace elements (Cu, Fe, Mn and Zn),no significant difference was found between captive and wild Snow Cocks.
