摘要
以蛋白质含量及其提取率等为指标,对比石油醚脱脂、传统"碱溶酸沉"工艺及石油醚脱脂和传统"碱溶酸沉"工艺结合这3种方法提取鸡肉蛋白,优选最佳提取工艺。研究表明:鸡肉干燥粉直接进行石油醚脱脂和透析48h即为鸡肉蛋白的最佳提取工艺,其蛋白质含量(按干基计)可达到93.70%。
In order to find the optimal process for extracting chicken protein, alkali-solution and acid-isolation, degreasing treatment with petroleum ether, and combination of the above-mentioned two methods were studied by the indexs of the content and extraction rate of chicken protein in this paper. The results showed that the optimal process was degreasing treatment with petroleum ether, dialysis for 48 h, the content of protein was 93.70%(dry base).
