紫叶风箱果叶片花色素苷的提取及其稳定性 被引量:18

摘要 通过不同提取溶剂和提取时间的实验,确定了紫叶风箱果(Physocarpus opulifolius‘Diabolo’)叶片花色素苷的最佳提取条件,即1%盐酸甲醇溶液,提取3~4 h。此外,对花色素苷在不同pH值、光源、温度环境条件下的稳定性进行了研究。结果表明:pH值可影响紫叶风箱果叶片花色素苷的稳定性,随着pH值的增加,花色素苷降解加快,因而使花色素苷由红变褐。花色素苷热稳定性较差,对光敏感,低温和黑暗能够保持花色素苷的稳定性。 An experiment was conducted to study the effects of different extraction solvents and extraction time on the extraction of anthocyanin from Physocarpus opulifolius 'Diabolo'.The optimal extraction conditions were obtained as methanol containing 1% HCl and extraction time 3-4 h.Moreover,the stability of anthocyanin was also studied under different pH,temperature and light intensity conditions.Results showed that pH value had an obvious effect on the stability of anthocyanin from P.opulifolius 'Diabolo'.The degradation rate of anthocyanin speeded up with pH increasing;thus the color of the extracted anthocyanin changed from red to brown.The anthocyanin with bad thermal stability is sensitive to light.Low temperature and darkness can maintain the stability of anthocyanin.
