摘要
采用酶法开发了营养价值高而价格低廉的蛋白质资源———猪血。AS1398中性蛋白酶对动物血的水解能力最强,胰蛋白酶次之,而木瓜蛋白酶与菠萝蛋白酶的水解能力最差。AS1398中性蛋白酶水解猪血的最佳条件为:pH为75,温度为40℃,酶与底物之比为8000U/g,底物浓度的质量分数为8%。酶水解7h,水解率可达489%。
The protein resource,porcine blood,which is cheap but its nutrition value is high,can be developed by enzymatic hydrolysis.AS 1.398 neutral protease has the best hydrolysis activity to porcine blood.The hydrolysis activity of trypsin to porcine blood is second,and that of papain and bromelin is the worst.The optimum hydrolysis conditions of AS 1.398 neutral protease are pH 7.5, 40 ℃,enzyme/substrate ratio 8 000 U/g ,cocnentration of substrate 8%.The hydrolysis ratio is up to 48.9%.
