摘要
【目的】以玉米蛋白粉为原料,确定最优提取工艺,并研究色素稳定性。【方法】以无水乙醇作为提取溶剂,分别用有机溶剂提取法和超声波辅助提取法提取玉米黄色素。【结果】超声波辅助提取法使玉米黄色素的提取效率得到了显著提高。超声波辅助提取法最佳提取工艺条件为:料液比为1∶10,温度30℃,提取时间15min,pH值为3,玉米黄色素提取率5.60%。【结论】玉米黄色素的耐光性较差,具有一定的耐热性,在弱酸性和中性介质中该色素比较稳定;Al3+、Fe3+对玉米黄色素有强破坏作用,色素有一定的抗氧化能力,但是高浓度的氧化剂对其有较强的破坏性;山梨酸钾对该色素的稳定性影响不大。
【Objective】The optimal extraction techniques of maize yellow pigment was determined,and the stability of pigment was also studied in this paper.【Method】Maize yellow pigment from corn gluten meal was obtained by using solvent extraction and ultrasound-assisted extraction method with corn gluten meal as raw material and ethanol as extraction solvent.【Result】The results showed that the extraction efficiency of corn yellow pigment was significantly increased by using ultrasound-assisted extraction method.The optimum extraction conditions of ultrasound-assisted extraction method was described as follows:ratio of liquid to material was 10∶1,temperature was 30℃,time was 15 min,pH was 3,and the extraction rate of yellow pigment was 5.60%.【Conclusion】Maize yellow pigment has many characteristics,such as poor lightfastness,certain heat resistance,comparatively stable in weak acid and neutral medium.Al3+ and Fe3+ had strong destructive effect on the pigment.The pigment had certain antioxidant capacity,but higher concentration oxidant had destructive influence on it.Potassium sorbate had little effect on stability of the pigment.
