摘要
主要比较了绿原酸及其白芨多糖包合物(B-CA)的体外抗氧化作用,分别研究了在化学模拟条件下清除超氧阴离子(O2.-)、羟自由基(.OH)以及模拟高温促腐败/酸败环境对猪油过氧化值(POV)与酸价(AV)的影响.结果表明,绿原酸及其包合物都能够有效的清除O2.-.、OH及在高温环境中可抑制POV以及AV值的增加,并且超过阳性对照物茶多酚的作用.白芨多糖包合物比未包合的绿原酸有更强的抗氧化作用,这可能与包合后的稳定性增加相关.
Embedded chlorogenic acid in dandelion with neutral heteropolysaccharide of Bletilla striata(BSPS)was studied in this paper.In order to investigate the difference of the anti-lipid peroxide between CA and B-CA,the clearing function on superoxide anion(O2·^-) and hydroxyl radical(·OH) of CA and B-CA was evaluated in this paper.And the inhibition on POV value and AV value of oil was studied in this paper too.The results showed that CA and B-CA had clearing function on O2·^- and ·OH.And they had the inhibition on POV value and AV value of oil too.Their function exceeds the function of CHA which is commonly used as positive control drug.B-CA has a better antioxidative function than CA which is according to the enhance of stability of inclusion.
