15种糜子壳粉的多酚类化合物的抗氧化活性 被引量:17

摘要 以15个糜子品种干燥种子为原料,对糜子壳粉中多酚类物质的含量及抗氧化活性进行研究。结果表明,在15个糜子样品中,壳粉中酚含量(以对应的没食子酸量表示)为9.357 3~19.092 9 mg/g,且主要以结合酚的形式存在;壳粉中黄酮含量以对应的芦丁量表示为0.247 9~0.682 4 mg/g,且主要以游离黄酮形式存在;糜子外壳颜色越深,其自由酚含量与自由黄酮含量越高。糜子壳粉中不同存在形式的多酚物质均具有抗氧化活性,其组分构成有明显差异。 Fifteen proso millet varieties with different color of seed pericarp were employed to study the contents and antioxidant activities of phenolic compounds in their seed pericarp.Results showed as follows:in fifteen proso millet varieties,total phenolic compounds contents in 1g whole pericarp flour ranged from 9.357 3 to 19.092 9 mg gallic acid,while most of the phenolic compounds in pericarp were in the bound form.Total flavonoid contents in 1g whole pericarp flour ranged from 0.247 9 to 0.682 4 mg rutin;The darker the proso millet pericarp was,the higher the free phenolic contents and the free flavonoid contents were.In conclusion,the pericarp of proso millet had complicated phenolic compounds and possessed antioxidant activities.
