摘要
大豆皂甙具有众多对人体有益的生理功能和生物活性,决定了它具有广泛的开发价值和应用前景。采用乙醇、正丁醇提取豆浆中皂甙,并通过香草醛法测定其含量,探讨了提取温度、提取时间、豆浆与乙醇的配比及水饱和正丁醇的用量对豆浆中皂甙含量的影响。确定豆浆中大豆皂甙最优提取工艺条件:反应时间为3h,豆浆与乙醇配比为1∶5,水饱和正丁醇为90mL,反应温度为75℃,此条件下,每100mL豆浆中皂甙含量为89.668mg。
Soyasaponin has wide development and applicative prospect due to its beneficial physiological functions and biological activities for people.The saponins in soybean milk can be extracted using ethanol and butanol and detected by vanillin.The effects of the temperatures,times,the ratio of soybean milk to alcohol and the saturation of normal butanol on extraction were investigated.The results suggested that the optimum extraction conditions were temperature for 75℃,the time for 3h,the mass ratio of soybean milk to alcohol for 1∶5 and the volume for butanol at 90mL.In this condition,the concentration for soyasaponins was 89.668mg per 100mL soybean milk.
