摘要
从浓香型大曲中分离得到一株产酯化酶根霉菌,初步鉴定为少根根霉(R.arrhizus)。对该菌株产酯化酶的培养条件进行研究,结果表明:以2%玉米粉为碳源,6%蛋白胨为氮源,发酵初始pH值为6.0,发酵温度为30℃,150r/min恒温振荡培养72h,酶活可达7.91U/mL。
A Rhizopus strain producing esterifying enzyme was isolated from Luzhou-flavor DaQu . It was preliminary identified as R.arrhizus. Through the study of the culture conditions of such strain to produce esterifying enzyme, it was found that the enzyme activity could reach 7.91U/mL as 2% corn meal used as C source and 6% peptone used as N source, initial pH value was 6.0, and 72h culture with 150 r/min agitation at 30℃.
