摘要
对浓香型大曲的酯化酶测定方法作了研究。建立有机相反应体系来代替传统方法的水相反应 ,与传统测定方法 (需反应 10 0h)相比 ,它能简单、快捷检测大曲质量 ,适合工业化生产的要求。有机相中酯化反应条件为 :在 30mL正庚烷有机反应介质中 ,35℃的条件下 ,0 15M的底物酸 ,己酸与乙醇的浓度比为 1∶1 2 5 ,加入 15g(干曲 )的大曲 ,仅用 2 4h就能比较出大曲酯化力的高低。
The checking method about the esterifying enzymes from DaQu was completely studied in this paper.Reaction in the organic phase could rapidly analyses the esterifying enzymes power,adapting to the demand of industrialized product,compared with traditional method.The best conditions as followed:35℃,0 15M n-caproic acid,1∶1 25 of n-caproic acid and ethyl alcohol,equal 15g dry DaQu was joined into 30mL n-heptane,the esterification of different quality DaQu can be distinguished in 24 hour,which was much less than the conversation measures'100 hour.
