摘要
采用乙醇浸提法制备姜油树脂,并测定其抗氧化活性。结果表明,姜油树脂中姜酚含量为30.90%,黄酮含量为16.69%,其抗氧化活性较强,对·OH和O2-·具有较高的清除能力,且具有较好的抑制油脂氧化的能力。当姜油树脂浓度为2.5mg/mL时,姜油树脂对·OH和O2-·的清除率分别为83.2%和86.3%,当姜油树脂添加量为0.04%时,其抗氧化效果接近于添加量为0.02%的合成抗氧化剂TBHQ。
The antioxidant activity of ginger oleoresin,extracted from ginger by ethanol,was studied.The results showed that the ginger oleoresin with 30.90 % gingerol and 16.69 % flavonoid had satisfactory antioxidant activity: it had strong scavenging activity on·OH and O2-·and effective effect on inhibiting the oxidation of oil.When the concentraction of ginger oleoresin is 2.5 mg/mL,hydroxyl radical and superoxide anion scavenging rate was 83.2 % and 86.3 % respectively.The anti-oxidant capability of adding 0.04 % ginger oleoresin is close to that of adding 0.02 % TBHQ.
