碱法改性玉米种皮不溶性膳食纤维的工艺条件探讨 被引量:5

摘要 主要研究碱法改性玉米种皮不溶性膳食纤维的最佳工艺条件。考察pH值、温度、时间及料液比等4个因素对改性后可溶性膳食纤维得率的影响,并在单因素的基础上进行正交试验得到碱法改性玉米种皮不溶性膳食纤维的最佳工艺条件:pH为10、温度为90℃、时间2.5h和料液比1∶50。 The optimum conditions for alkali modification of insoluble dietary fiber of corn bran were studied.Four factors including pH,temperature,time,and solid-liquid ratio based were investigated.After orthogonal experiments based on the single-factor test,the optimum conditions for alkali modification of insoluble dietary fiber of corn bran were obtained as follows: pH 10,temperature 90 ℃,alkali modification time 2.5 h and the solid-liquid ratio 1∶50.
