摘要
简述了苏州黄酒的起源,历史文化底蕴和唐、宋、明、清姑苏古酒坊黄酒工艺精髓及丰富多彩苏派黄酒名品。在此基础上提出对传统民间酒坊技艺"九必精要"和姑苏老黄酒的传承、完善、融合、创新。
The origin of Suzhou rice wine,the heritage of history and culture,the technological spirit of aged rice wine of Gusu old wine workshop during Tang,Song,Ming and Qing dynasties,as well as the various brand styles of rice wine were briefly introduced. Heritage,improvement,fusion and innovation of the know-how of "Jiubijingyao" of traditional folk wine workshop as well as the aged rice wine of Guosu were proposed.
