摘要
将中国传统食品—年糕的工业化生产工艺作了介绍。此法是在宁波年糕传统生产工艺基础上结合现代主便米粉自动化生产工艺而实现的。
This paper introduces the industrial processing technology of rice cake which is a sort of chinese traditional food. The method presented is based on the traditional processing technology of Ningbo ricecake and the modern processingtechnology of instant rice-noodle.
