摘要
大麦根中含有较高活力的磷脂酶。而影响磷脂酶提取的因素依次为温度、pH 和提取时间。温度对磷脂酶提取影响最大。Ca2 + 在一定条件下 对磷脂酶有激活作用。
Germinating barley root shows higher phospholipase activity .The best way to extract phospholi paseis 20hours,solventin which wateristen times as much as germinating barley root and optimum temperatureis 20 ℃with pH6.5 .The affecting factors of extraction istemperature ,pHand time .Ca2 +has stimulant function of phospholipase .When Ca2 +reaches 0.005mol/ l, reaction temperature is 40 ℃,the phopholipase activity is at the highestlevel,butifthe temperatureis over 65℃,phopholipase almostlosesits activity .
