摘要
本文全面综述了当前国内外食品加工的高新技术,详细介绍了微波技术、微胶囊技术、超高压技术、膜技术、超微粉碎技术、真空冷冻干燥等技术,并对高新技术的发展趋势进行了展望。
The new advanced technologies in the food pro-cessing nowadays were comprehensively reviewed in this paper such as microware technology, the micro-encapsulation technology, the ultra-high pressure technology, the membrane technology, the ultrafine grinding technology and the vacuum freeze drying etc. The trend of new advanced technology was also presented.
