摘要
通过对酶解工序的研究,优化以大豆分离蛋白为原料同时生产两种大豆肽的生产新工艺。实验结果表明:产物大豆肽A的最佳工艺条件为酶解时间4h,体系pH8.0,温度60℃;产物大豆肽B的最佳工艺条件为酶解时间3.5h,体系pH8.5,温度55℃。另外,测定产物A和产物B的分子量分别在440u和650u。
soybean separation protein was used as material to optimazate the new production technology which two soybean peptides were producted at the same time through study of enzymatic processes.The results show that the optimum technology conditions were:product A hydrolysis time 4 h,system pH8.0,temperature 60 ℃;and product B hydrolysis time 3.5 h,system pH8.5,temperature 55 ℃.In addition,the molecular weight of the product A and product B was about 440 u and 650 u,respectively.
