摘要
以黑豆为富硒载体,制备富硒黑豆芽,确定了一种硒含量测定方法和黑豆富硒的最佳工艺条件。通过浸泡和喷淋相结合的方式添加不同浓度的亚硒酸钠溶液,在黑豆发芽的过程中实现对硒元素的生物富集,采用极谱法分析测定黑豆中硒含量,并通过该方法优化黑豆富硒的最佳工艺。试验结果表明极谱法测定黑豆中硒含量标准偏差小,重复性好,是一种较好的硒含量测定方法,当亚硒酸钠浓度为20μg/mL、培养时间为48h时黑豆富硒效果最佳,制备出的富硒黑豆芽硒含量为15.44μg/100g。
On this study, black bean enriched with selenium was used as carrier to produce black bean sprout; optical methods of deterring selenium content and selenium accumulation were built up. During sprouting process, different concentrations of selenium were added by soaking and spraying to make sure the selenium biological accumulation. Polarograph was used to measure selenium content, with which optimum technology of selenium-enriched black bean was optimized. The results indicated that polarograph can gain low standard deviation outcome. Optimum cultivation condition of selenium-enriched black bean sprouts was the concentration of selenium solution 10 μg/mL and the cultivated time 48 h, with the selenium concentration at15.44 μg/100g.
