酶法提取蕨根膳食纤维的工艺优化 被引量:9

摘要 为有效利用蕨渣,采用水酶法制备蕨根膳食纤维,对木瓜蛋白酶和β-淀粉酶的工艺条件进行优化,并对产品的功能特性指标进行分析。确定提取工艺条件为:料水比1∶6(W∶V),木瓜蛋白酶(400000U/g)的添加量0.03%、温度50~55℃、pH6.5、水解时间90min;β-淀粉酶(100000U/g)添加量0.02%、温度60~65℃、pH5.6、水解时间60min。所制备的蕨根膳食纤维持水力和膨胀力分别为519%和6.04mL/g,说明蕨渣是一种良好的膳食纤维资源。 Dietary fiber was produced by combining water extraction with enzymatic hydrolysis from Pteridium aquilinurn root for effective use of residual of Pteridiurn aquilinum , the extracting process was optimized, and its indicators of functional property were also an alyzed. Better enzymatic hydrolysis conditions were as follows: ratio of Pteridium aquilinum to water 1 : 6(W = V), addition amount of papain(400 000 U/g) 0.03%, temperature 50-55 ℃ , pH 6.5 and enzymatic hydrolysis time 90 min;addition amount of β-amylase(100 000 U/g) 0.02%, temperature 60-65 ℃, pH 5. 6 and enzymatic hydrolysis time 60 min. The physiological activation of dietary fiber was good from Pteridium aquilinum root, holding water capacity and swelling capacity were 519% and 6.04 mL/g, respectively. It shows that of Pteridium aquilinum residual is a good resource of dietary fiber.
