摘要
目的:调查大连市餐饮业和集体食堂等单位的餐具卫生状况。方法:采用GB14934-1994国标方法对餐厅和厨房的餐具进行大肠菌群测定。结果:餐饮单位餐具消毒总合格率为73.80%(1857/2516),其中餐饮业合格率为72.88%(1231/1689),集体食堂为75.70%(626/827)。结论:应加强对餐具卫生状况的监督管理,尤其要关注中、小型餐饮店、大专院校食堂及其周边饭店的卫生状况。
Objective:To investigate the sanitary status of disinfectant tablewares in catering industry and canteens in Dalian.Methods:Coliform of tablewares collected from dining-rooms and kitchens were detected based on method GB14934-1994.Results:The qualification rate of Coliform of tabelwares was 73.80%(1857/2516),that of catering industry was 72.88%(1231/1689),canteens 75.70%(626/827).Conclusion:The supervision on hygienic status of tabelwares should be strengthened.Attention to the sanitary status of small and medium size Catering industry,universities and the surrounding hotels is necessary.
