2009—2011年开封市餐饮业餐饮具消毒效果监测结果 被引量:7

Results of monitoring on tableware disinfection in catering industry of Kaifeng City from 2009-2011

摘要 目的了解开封市餐饮具消毒合格情况,为餐饮具卫生监督提供科学依据。方法按GB 14934-94《食(饮)具消毒卫生标准》规定的纸片法进行采样和大肠菌群的快速检测及评价,数据录入和分析采用SPSS 13统计软件进行。结果 2009—2011年共检测9 429件餐饮具,合格8 319件,总体合格率为88.2%;餐饮具合格率呈逐年上升趋势,各年度间餐饮具消毒合格率差异有统计学意义(P<0.05)。不同餐饮单位餐饮具检测结果合格率比较:学校集体食堂最高,为92.9%;大型宾馆酒店娱乐场所合格率最低,为84.7%,差异有统计学意义(P<0.01)。不同季度检测结果差异明显,第2、3季度合格率明显低于其他季度,差异有统计学意义(P<0.01)。结论开封市餐饮业中使用的餐饮具卫生状况整体情况较好,建议卫生监督部门加强对大型宾馆酒店和夏秋两季的餐饮具卫生监管力度,尤其是在第2、3季度。要加强餐饮业从业人员的卫生知识培训,提高餐饮具消毒合格率,从而防止食源性疾病的发生。 [Objective]To investigate the disinfection effect of tableware in Kaifeng City,provide scientific basis for hygienic supervision in the future.[Methods]Coliform group was sampled and detected with paper strip method,and evaluated according to the Hygienic standard for disinfection of dinner and drinking set(GB 14934-94).SPSS 13 software was applied on data input and analysis.[Results]A total of 9 429 tableware samples were examined during 2009-2011,and 8 319 were qualified with the total qualified rate of 88.2%.The qualified rate increased year by year,and there was a significant difference in annual qualified rate(P0.05).Among different catering enterprises,the qualified rate in school cafeterias was the highest(92.9%),that in large hotels and entertainment clubs was the lowest(84.7%),and the difference was significant(P0.01).There was a significant difference in qualified rate between four quarters,and the qualified rate in the second quarter and the third quarter was significantly lower than that in other quarters(P0.01).[Conclusion]The overall sanitary condition of tableware in catering industry of Kaifeng City is satisfactory.The health supervision department should strengthen monitoring and detection in large hotels,especially the second quarter and the third quarter.It is necessary to reinforce the training of health knowledge among employees in catering industry,and improve the qualified rate of tableware disinfection,to prevent the food borne diseases in the future.
