摘要
以金樱子果和西瓜皮为主要原料,经取汁、调配、过滤、杀菌等加工工序,研制出了混合透明的营养保健型果汁饮料。研究表明,用明胶能有效除去金樱子果汁中的多酚物质,防止了产品的浑浊;适量添加西瓜汁和柠檬酸,能有效地抑制金樱子汁的涩味,提高了产品的适口性并确定了产品的最佳生产配方。
A clear mixed nutritive fruit-juice drink is made from Rosa Laevigata Michx fruit and watermelon peel as main materials through the processes including juice extraction,formulation,filtration and sterilization.The drink is characterized by rich fruit aroma,refreshing effect,unique flavour,low sugar and low calorie.Researches have shown that gelatin can effectively remove polyphenols in the fruit juice to make the product clear and the proper addition of watermelon peel juice and citric acid can effectively reduce the astringent taste to render the drink more delicious.The optimum production formula and the related quality standards are determined.
